Sugar-free Roll-out Cookies

The holiday season is a perfect time to gather around and making sugar cookies in all your favorite shapes and sizes. 

Whether you're leaving cookies for Santa or eating them all yourself, these Christmas cookies are sure to delight.

Ingredients

2 cups flour 

¼ tsp salt 

1 ½ sticks salted butter 

¾ cup Monkfruit Baking Sweetener 

1 egg 

1 tsp vanilla 

Instructions

Preheat oven to 350*F. Combine all ingredients and mix just until combined.  

Roll out ½" thick.

Dip cookie cutter into flour, cut out cookies and place on greased or parchment paper-lined cookie sheet.

Bake for 10-12 minutes just before edges turn golden.

Cool fully on rack before frosting.  

 

You can also try this vegan variation.

Buttercream Frosting

1 cup unsalted butter (2 sticks), softened
4.5 cups Lakanto Powdered Monkfruit Sweetener
1 Tbsp pure vanilla extract
4-5 Tbsp heavy cream or non-dairy coconut milk

This recipe can easily be halved with good results.

Beat the softened butter on medium speed with an electric mixer until soft and creamy.

Continue to beat over medium speed as you gradually add the Lakanto Powdered Monkfruit Sweetener.

Stop the mixer and scrape down the sides of the bowl with a spatula as needed to fully incorporate all of the sweetener.

Beat again on high for 1-2 minutes.

Once butter and sweetener have become your dream consistency and fluffiness, add the vanilla extract.

Beat in the heavy cream or milk 1 Tbsp at a time until a desired consistency is reached.
