Here's a delicious dose of nutrient-packed greens in a convenient smoothie. It's also keto friendly!
- 2 Tbsp fresh peppermint
- 1-1/2 c almond milk, unsweetened
- 1 avocado
- 1/2 cup cucumber, chopped
- 1/4 cup raw spinach
- 1/4 cup kale
- 1/2 lime, juiced
- lime peel, to taste
- Lakanto Monkfruit Extract Drops to taste (start with 2-3 drops)
- Peel and dice the avocado, and chop the mint leaves.
- Add the diced avocado, cucumber, milk, mint leaves, spinach and kale to a blender. Squeeze in the lime juice and add in lime peel to taste.
- Blend until completely smooth.
- Serve immediately over ice.
