Keto Super Green Smoothie

Here's a delicious dose of nutrient-packed greens in a convenient smoothie. It's also keto friendly!

Ingredients:

  • 2 Tbsp fresh peppermint
  • 1-1/2 c almond milk, unsweetened
  • 1 avocado
  • 1/2 cup cucumber, chopped
  • 1/4 cup raw spinach
  • 1/4 cup kale
  • 1/2 lime, juiced
  • lime peel, to taste
  • Lakanto Monkfruit Extract Drops to taste (start with 2-3 drops)

Directions:

  1. Peel and dice the avocado, and chop the mint leaves.
  2. Add the diced avocado, cucumber, milk, mint leaves, spinach and kale to a blender. Squeeze in the lime juice and add in lime peel to taste.
  3. Blend until completely smooth.
  4. Serve immediately over ice.
