This mock version may be sans potato, but it still has the flavor you love. Tangy mayo and dijon hold the components together, and it’s seasoned with fresh dill and paprika. You won’t even miss the potatoes!
8 oz Cauliflower Cooked Without Fat
2 large Hard Boiled Egg
¼ tsp Salt
¼ tsp Black Pepper
¾ cup Light Mayonnaise
2 tbsp Dijon Mustard
½ tsp Vinegar Distilled
½ tbsp Dill Weed Fresh
2 tsp Spices Paprika
- Chop both the cooked cauliflower and hard boiled eggs into bite sized pieces. Mix these together with the salt and pepper.
- In a different container, mix the mayo, dijon, vinegar, dill, and paprika.
- Combine the dry ingredients and wet ingredients together.
- Garnish with additional dill and paprika at your discretion.
