Blueberry Sponge Mug Cake

A great single-serving treat for when you're craving cake. Blueberries are full of antioxidants and other nutrients your body needs so eat up! 

Ingredients

1 tbsp Butter
2 tbsp Cream Cheese
2 tbsp Coconut Flour
1 tbsp. Lakanto Classic Monkfruit Sweetener (also available in Organic)
1 tsp Vanilla Extract
1 Large Egg
1-1/2 tbsp Blueberries, frozen, unsweetened

Instructions

  1. Combine the butter and cream cheese together. Microwave on HIGH for 20 seconds until melted and stir together.

  2. Combine all other ingredients together except the egg and blueberries. Add a pinch of salt--to taste.

  3. Add the egg then mix well. Add the blueberries.

  4. Throw in the microwave for 1-2 minutes. Or put it in the oven to bake until the cake puffs considerably.

  5. Serve with whipped cream if desired and enjoy!

Made 11/14/19: This was pretty good, and really easy. I tripled the vanilla to give it some more flavor. Some lemon zest would be really good. Also, it’s not very sweet, so if your berries are tart, add more Lakanto. #Tryazon #madewithlakanto #discoveryourchi
