Pumpkin Seed Cookies (Vegan & Gluten-Free)

The best tasting vegan, gluten-free cookies you will ever eat. The best part is you can customize them however you want. Get extra chocolate and extra protein in your life by adding whatever you want to these delicious cookies.

Ingredients

2 chia seed eggs (2 chicken eggs for non-vegan alternative)
2 tbsp of chia seeds
tbsp of water

1 cup gluten-free flour blend
2 cups gluten-free oats
1/2 cup almond flour
1 1/2 tsp baking soda
1/8 tsp salt

1 cup Lakanto Classic Sweetener (or 1/2 of Classic & 1/2 of Golden)
1/2 cup coconut oil, melted (or butter)
1 tsp vanilla

Craisins, coconut, chopped up Lakanto Chocolate Bar, Lakanto Chocolate Chips, pumpkin seeds, nuts, etc

Directions

Preheat oven to 350.

To make flax seed eggs mix together:

2 tbsp of chia seeds
6 tbsp of water

Let sit for 5-10 minutes to congeal.

Mix together and set aside:

1 cup gluten-free flour blend
2 cups gluten-free oats
1/2 cup almond flour
1 1/2 tsp baking soda
1/8 tsp salt

Cream together:

1 cup Lakanto Classic Sweetener
1/2 cup coconut oil, melted (butter)
1 tsp vanilla


Add chia eggs to wet ingredients and mix. Incorporate dry and wet ingredients.

Fold in a handful or 2 of raisins, chopped chocolate, nuts, coconut really anything.

Form into balls and drop onto a greased or lined baking sheet. Bake for 5 to 10 minutes.
