Ingredients
2 chia seed eggs (2 chicken eggs for non-vegan alternative)
2 tbsp of chia seeds
6 tbsp of water
1 cup gluten-free flour blend
2 cups gluten-free oats
1/2 cup almond flour
1 1/2 tsp baking soda
1/8 tsp salt
1 cup Lakanto Classic Sweetener (or 1/2 of Classic & 1/2 of Golden)
1/2 cup coconut oil, melted (or butter)
1 tsp vanilla
Craisins, coconut, chopped up Lakanto Chocolate Bar, Lakanto Chocolate Chips, pumpkin seeds, nuts, or any other plant-based goody to toss in!

Directions
Preheat oven to 350.
To make flax seed eggs mix together:
2 tbsp of chia seeds
6 tbsp of water
Let sit for 5-10 minutes to congeal.
Mix together and set aside:
1 cup gluten-free flour blend
2 cups gluten-free oats
1/2 cup almond flour
1 1/2 tsp baking soda
1/8 tsp salt
Cream together:
1 cup Lakanto Classic Sweetener
1/2 cup coconut oil, melted (butter)
1 tsp vanilla
Add chia eggs to wet ingredients and mix. Incorporate dry and wet ingredients.
Fold in a handful or 2 of raisins, chopped chocolate, nuts, coconut really anything.
Form into balls and drop onto a greased or lined baking sheet. Bake for 5 to 10 minutes.

I made these and think they are really good. My family likes them, too. I added a few pinches of salt and next time will add less sugar as they are a little too sweet. My family actually likes them plain without dried cranberries or chocolate so I just made the batter and then cooked a few plain, a few with cranberries, then a few with chocolate for variety.
