A few tips for this recipe:
*using fresh, in season strawberries will produce the best flavor but in a pinch frozen, unsweetened berries will work fine
*adding even 1 tsp of low carb alcohol like gin or vodka will improve the consistency of the ice cream. this is because alcohol has a very low freezing point and adding even a small amount will lower the freezing point for your ice cream
* make sure you get Heavy Whipping Cream at the store. The high fat content will ensure success in this recipe
Ingredients in Keto Strawberry Ice Cream:
- 1 ¼ cup Heavy Whipping Cream, cold
- 1 cup Plain Greek yogurt or sour cream (full fat)
- 8-10 ounces sliced, fresh, chilled, strawberries
- ½ Cup Lakanto Powdered Monkfruit Sweetener
- 3 T Lakanto Brown Monkfruit Sweetener
- 1 tsp. Vanilla extract
- Dash of salt
- 1-2 tsp Vodka or Gin
Ingredients in Keto Strawberry Ice Cream:
- Into a blender add: strawberries, Lakanto Brown Monkfruit Sweetener, vanilla extract and blend until somewhat pureed but small chunks remain. (puree to your liking)
- In a large bowl, whisk together the yogurt/sour cream and strawberry mixture until thoroughly combined.
- Combine the heavy whipping cream and Lakanto Powdered Monkfruit Sweetener into a stand mixer or hand mixer and whip until it reaches firm peaks. Careful not to over beat.
- Gently fold the whipped cream into the strawberry mixture just until barely combined.
- Transfer into an airtight container and freeze a minimum of 4 hours.
- Enjoy right away for best results or store in the freezer in an airtight container for up to 3 days. Will freeze quite hard the longer it is in the freezer, so remove from freezer and allow to sit and soften for about 10-20 minutes before serving. Makes 8, ½ cup servings
