Ingredients

    • ½ cup Lakanto Monkfruit Sweetened Peanut Butter Spread, heated and smooth 

    • ¼ cup Lakanto Powdered Monkfruit Sweetener 

    • ¼ cup melted butter or coconut oil

    • 1 T almond milk

    • ½ cup blanched almond flour 

    • ½ cup coconut flour 

    • ½ tsp salt

    • 1 tsp vanilla extract

    • ½ cup Lakanto Sugar-Free Chocolate Chips 

    • 1 T butter or coconut oil

    Directions

    1. Line a square 9”x9”  pan with parchment paper.

    2. Melt butter/oil and Lakanto Peanut Butter Spread until smooth and liquidy. 

    3. In a mixing bowl, combine melted butter/oil, milk, Lakanto Peanut Butter Spread, Lakanto Powdered Monkfruit Sweetener, vanilla extract and salt. 

    4. Stir in flours until incorporated and it becomes a dough. 

    5. Press dough firmly into prepared pan, using a tool or your hands to help evenly distribute on the bottom of the pan. 

    6. Melt Lakanto Sugar-Free Chocolate Chips and butter/coconut oil together until smooth and pourable.

    7. Pour over dough and smooth out to edges.

    8. Refrigerate at least 1 hour to set up fully. Makes 16-20 bars. 1 bar per serving.

    Would unsweetened peanut butter (a natural one) do as well? I already have that, and I’m thinking the peanut butter layer doesn’t have to be super sweet.
