Our product development team collected feedback from both customers and expert bakers about how our sweeteners baked and used that feedback to develop Lakanto Monkfruit Baking Sweetener, a zero-calorie sweetener, specifically for baking. 

Since the release of this baking sweetener, people have used it not only for baking, but for other desserts where they want a powdered texture, such as cheesecake, frostings, and sauces. It is one of our most versatile products.

How much Baking Sweetener should you use?

Lakanto Monkfruit Baking Sweetener can be used as a cup-for-cup substitute for sugar. Since it has a powdered texture, it is a bit finer than regular granulated white sugar. Depending on the recipe, you could use the full 1:1 replacement or try a little less.

What does Baking Sweetener taste like?

Monk fruit is over 300 times as sweet as sugar. Lakanto Monkfruit Baking Sweetener uses a combination of monk fruit and erythritol and it looks and tastes just like sugar. Unlike sugar, monk fruit has no carbs or calories and a glycemic index of zero!

Flours that work best with Lakanto Monkfruit Baking Sweetener:

  • Cassava flour
  • Tapioca flour
  • Coconut flour
  • Almond flour
  • Arrowroot flour
  • Pastry flour
  • All purpose-baking flour (this flour sometimes requires more fats to prevent moisture from escaping. Try adding cream cheese, an extra egg yolk, or butter/oil)

Try baking sweetener to make sugar-free whipped cream

Lakanto Monkfruit Baking Sweetener is the perfect texture and consistency to make whipped cream. You can make sugar-free whipped cream using either heavy whipping cream, or for a dairy-free alternative, try using a can of coconut milk or coconut cream. Decant the coconut milk or cream into a container and stir to combine any separation that has occurred. Cover and chill the coconut milk or cream before use—homemade whipped cream turns out best when the base has been thoroughly chilled. You can also use a metal mixing bowl and place it and the whisk attachment for your electric mixer in the freezer beforehand. Whip the heavy whipping cream, coconut milk, or coconut cream at a medium-to-high speed until it starts to gain more volume. When it is light and fluffy, slowly sift in Lakanto Monkfruit Baking Sweetener. Continue adding to taste. You can add clear imitation vanilla for a subtle depth of flavor.

Can I use Lakanto Monkfruit Baking Sweetener to replace maple syrup or honey?

Lakanto Monkfruit Baking Sweetener dissolves well due to its powdered texture and you can use it as a substitute for maple syrup or honey! 

  1. Use a little less Lakanto Monkfruit Baking Sweetener than the stated amount of liquid sweetener in a recipe. 
  2. Add a small amount of liquid (if the recipe does not include other liquid ingredients) to dissolve the sweetener.
