Sugar-Free Shamrock Shake

/2A healthy keto version of a favorite fast-food treat to celebrate St Patrick’s Day with no guilt and no sugar. This creamy smoothie tastes like a minty vanilla milkshake and has only 2 net carbs. It will surely have you saying "Top O' The Morning" in your best Irish accent. 

 

Ingredients in Sugar-Free Shamrock Shake:

¾ cup Unsweetened Almond or Cashew Milk

¼ cup Heavy Cream or Coconut Cream 

1/2 medium Avocado (without skin and seed, can be frozen cubes)

1/2 cup Baby Spinach

1-2 drops Lakanto Liquid Monkfruit Extract Vanilla 

½ tsp Peppermint Extract/Peppermint essential oil (or 3-5 fresh mint leaves)

1/2 -1 cup Ice Cubes

Instructions for Sugar-Free Shamrock Shake:

  1. In a blender, add all the ingredients and blend at high speed to combine. Pause to check for sweetness and add additional sweetener if needed. Blend on high speed again. 
  2. Pour into two glasses and top with sugar-free fresh whipped cream made with Lakanto Powdered Monkfruit Sweetener. A great recipe here 
  3. Finish with Lakanto Sugar-Free Chocolate Chips or fresh mint leaves
