Slow Cooker Cinnamon Applesauce

Ingredients

  • 4 lbs apples (a mix of Honeycrisp and Granny Smith recommended), peeled, cored, and cut into 1-inch chunks

  • ¾ cup water or unsweetened apple cider

  • 2 tbsp fresh lemon juice

  • ⅓ cup Lakanto Coconut Sugar with Monk Fruit, plus more to taste

  • 2 tsp ground cinnamon

  • ¼ tsp salt

  • ½ tsp vanilla extract (optional)

Directions

  1. Add the apples, water (or apple cider), lemon juice, Lakanto Coconut Sugar with Monk Fruit, cinnamon, and salt to your slow cooker. Stir until the apples are evenly coated.

  2. Cover and cook on Low for 6 to 7 hours or High for 3 to 4 hours, until the apples are very soft.

  3. Stir in the vanilla extract, if using.

  4. Blend with an immersion blender until smooth, or carefully transfer the apples to a blender and blend in batches. Add a splash of water if you'd like a thinner consistency.

  5. Taste and adjust the sweetness by adding more Lakanto Coconut Sugar with Monk Fruit if desired.

  6. Let cool slightly before serving, or store in an airtight container in the refrigerator.
