Instructions 

1. Add the sliced strawberries and 2 tablespoons of water to a small saucepan. Place over medium-high heat.  

2. Once the mixture begins to simmer, cover the pan and reduce the heat to medium. Cook for about 15 minutes, or until the strawberries have softened and released their juices.  

3. Mash the strawberries with a potato masher, fork, or spatula until they reach your preferred texture. Leave some fruit pieces for a chunkier jam, or mash more thoroughly for a smoother spread.  

4. Reduce the heat to low and continue simmering for about 25–30 minutes, stirring often, until the mixture has reduced and thickened. As it cooks down, stir more frequently to prevent the berries from sticking or burning.  

5. Remove from heat. Stir in the lemon juice and 1 tablespoon of Lakanto Classic Allulose and Monk Fruit Sweetener. Taste and add more sweetener if desired.  

6. Stir in the ground chia seeds or xanthan gum. Let the jam sit for a few minutes to thicken. It will continue to set as it cools.  

7. Cool completely, then transfer to a clean jar or airtight container.  

8. Store in the refrigerator for 2–3 weeks or freeze for up to 3 months.
