Chloe Kim Inspired, Sugar-Free, Chocolate Pancakes

Chloe Kim is an American snowboarder and two-time Olympic gold medalist. She became the youngest woman to win an Olympic snowboarding gold medal when she won gold in the women's at 17 years old.

At the 2022 Winter Olympics, she became the first woman to win two gold medals in halfpipe.

Chloe Kim loves food — ice cream, churros, cookies, and breakfast.

Ingredients in Chloe Kim's Sugar-Free Chocolate Pancakes: 


Instructions for Chloe Kim's Sugar-Free Chocolate Pancakes: 

In a bowl, add Lakanto Sugar Free Pancake & Baking Mix, vanilla extract, water, eggs & salt. Stir minimally to almost combine ingredients. Melt Lakanto Sugar Free Chocolate Chips in a microwave safe bowl in 30 second increments until smooth. Add melted chocolate and give pancake batter one more easy stir. (do not overmix!)


Heat griddle or frying pan to medium and coat with baking spray or butter/oil. Scoop about 1/4 cup of batter onto hot griddle. Cook until bubbly and then flip pancakes. Cook 2-3 minutes and then remove from pan. Serve with Lakanto Cinnamon Maple Syrup, fresh berries or delicious just how they are! Makes 15-18 3" pancakes.

Pro tip: Make a big batch and then freeze for those busy mornings after a workout or a late night snack. Heat in microwave for 30-45 seconds and enjoy!
