A tasty, creamy, sugar-free ice cream made with Lakanto Matcha Latte mix sweetened with Monkfruit Sweetener. Simple ingredients, a method that is fool-proof, and a dessert made with Matcha Tea that's maybe one step better than drinking it.
Ingredients
- ¾ cup milk of your choosing (we used unsweetened almond milk)
- ¾ cup heavy cream or coconut cream

3-4 drops of Liquid Monkfruit Sweetener, Vanilla
- 3 T Lakanto Matcha Latte Mix
- 2 T hot water
- 2 egg yolks
Directions
In a saucepan over medium heat, stir together milk, cream, and Lakanto Liquid Monkfruit Drops. Add egg yolks and stir until combined.
- In a small bowl or cup, add hot water and Lakanto Matcha Latte mix and stir well until dissolved.
- Add Matcha to milk mixture and cook for 4-5 minutes on medium low heat until thickened.
- Pour into a covered container and refrigerate 2-3 hours or overnight.
- At this point you can follow the directions for your ice cream maker and finish.
- Alternate method- freeze mixture in a shallow container until softly frozen. Serve immediately.
Recipe Note
If storing in freezer longer than a few hours, remove ice cream and defrost until soft enough to blend in blender. Serve immediately for best results.
