This recipe for Cinnamon Rolls made with Lakanto Bread Mix is perfect for the weekend, a holiday brunch or just because.


Makes 6 larger rolls, or 8 smaller rolls.

Ingredients

    • 1 Lakanto Bread Mix, All Purpose, Keto Friendly

    • 2 1/2 tsp. yeast

    • 1/4 c. + 3 Tbsp. warm milk of choice (between 105F-110F)

    • 2 eggs

    • 1/4 c. oil

    • 3 Tbsp. Lakanto Brown Monkfruit Sweetener

    • 1/2 tsp. ground cinnamon

    • 1 Tbsp. softened coconut oil

    • 1/4 c Lakanto Baking or Powdered Monkfruit Sweetener

    • 1-1 1/2 T milk of choice

    • 1/2 tsp vanilla extract 

    Directions

      1. Add yeast to warm milk (110-115 F) Let sit for 10 min

      2. Remove 1 Tbsp. mix Lakanto Bread Mix and set aside.

      3. Combine yeast/milk mixture with eggs and oil

      4. Reserve 1 Tbsp mix to roll dough. Combine remaining mix with liquid mixture. (Dough should be tacky but not sticky).

      5. Dust surface with reserved dry mix. Roll dough out into rectangle about 1/4 inch thick.

      6. Spread coconut oil on dough. Combine cinnamon and Lakanto Brown Monkfruit Sweetener and cover the dough

      7. Roll up dough lengthwise and cut into 6 even pieces. Add to parchment lined baking pan

      8. Let rise for 30-45 minutes. Rolls should almost double in size.

      9. Cover the pan with foil and bake at 350 for 10 minutes.

      10. Remove foil and bake uncovered for 10-13 minutes or until lightly browned on top.

      11. Remove from oven.

      12. To make the glaze, combine Lakanto Baking or Powdered Monkfruit Sweetener, milk, and vanilla extract in small bowl. (If too thick, add more milk 1/2 tsp. at a time. If too thin, add more Monkfruit Sweetener 1/2 tsp. at a time.

      13. Spoon glaze over cinnamon rolls while they are still warm.
