Butterfly Pea Flower Tea is one of the most unique looking drinks in the world, with a beautiful, indigo hue. Despite not being well known in the West, this blue tea is far from being new. It has been popular for centuries in South-East Asia.
Butterfly Pea Flower Tea is naturally caffeine free, loaded with antioxidants and contains a range of polyphenols (naturally occurring compounds) that give the drink its blue color.
The flower's most impressive quality is how its color responds to acid. Adding a squeeze of lemon or lime juice to Butterfly Pea Flower Tea causes a color shift from deep blue to vibrant magenta!
With summer's heat still sticking around, we combined the refreshing flavors of our Vanilla Simple Syrup or Vanilla Monkfruit Extract, a squeeze of fresh lime and paired it with this earthy flavored tea. We sweetened it just a bit with our Organic Monkfruit Sweetener.

Ingredients for Sugar-Free Butterfly Tea Latte:
- 2 tsp Butterfly Pea Flower Loose Tea or 2 Butterfly Pea Flower Tea Bags
- 1 cup filtered water, heated to 140°
- 1-2 tsp of Organic Lakanto Monkfruit Sweetener
- 2 T Vanilla Simple Syrup or 1-2 drops Liquid Vanilla Monkfruit Extract
- 1 tsp Lime or Lemon juice (we used half a fresh Lime)
- 1-2 Tablespoons any milk or cream (we used half & half)
Directions for Sugar-Free Butterfly Tea Latte:
Steep tea for 5-6 minutes. Let cool. Fill 2 tall glasses with ice cubes and pour in the blue tea, equally. Add Organic Monkfruit Sweetener and Vanilla Simple Syrup or Liquid Vanilla Monkfruit Extract. Stir. Add Lime or Lemon juice and watch it change color!
Drizzle milk or cream over the top. The swirls will settle on the bottom leaving a gradient pastel violet. Enjoy this beautiful beverage! But first, snap a photo.
