Strawberry Monk Fruit Popsicles
Nothing tastes as much like summer as strawberries. With a hefty portion of strawberries needed to make these popsicles, you're sure to get your fix—not to mention lots of memorable snapshots of family with stained lips and giant smiles. These sweet and tangy popsicles are sure to please every crowd.
Ingredients for Strawberry monk fruit popsicles

4 cups fresh ripe strawberries

1/4 cup Lakanto Maple Syrup

1 Tbsp lemon juice

pinch of salt
Simple instructions to make strawberry popsicles
- Bend all ingredients in high-speed blender until smooth.
- Taste to adjust sweetness.
- Pour into popsicle mold.
- Freeze for 8 hrs or until solid.
- Recipe makes 8 popsicles
Pro Tip: Add a creamy swirl by layering with a bit of yogurt sweetened with Liquid Monkfruit Extract drops.

Dear Ellen- the classic monkfruit will become “crunchy” and unless you prefer a candy crunch added to the recipe I suggest you try Lakanto’s Baking Monkfruit powder instead. It should turn out amazing ;)
I recently made a lemon birthday cake with homemade lemon curd filling and buttercream icing I used Classic monkfruit in all of them. The next day the lemon curd especially tasted grainy, like the sweetener had not dissolved. I followed the recipes precisely. Any ideas on what went wrong?
