In order to achieve the perfect soft consistency, this recipe requires an ice cream maker. Once it's ready it can be eaten in the moment or made ahead and stored in an airtight container in the freezer.
KETO VANILLA ICE CREAM
Equipment needed: 
  • Ice cream maker

Keto Vanilla Ice Cream Ingredients:

  • 2 cups Heavy Whipping Cream, cold
  • ½ Cup Lakanto Powdered Sweetener
  • 1 tsp. Vanilla extract
  • Dash of salt
  • Rock Salt for ice cream maker (if required for your specific ice cream maker)

How to Make Sugar-Free Vanilla Ice Cream:

  1. Combine the heavy whipping cream, Lakanto Powdered Sweetener, vanilla, and dash of salt into a medium bowl and whisk until incorporated.
  2. Pour into an ice cream maker, and follow the instructions from the manufacturer for churning the ice cream.
  3. Enjoy right away or store in the freezer in an airtight container for up to 3 days.  Remove from the freezer and allow to sit and soften for about 10 minutes before serving.
