Monkfruit Sweetened, Cookie Butter Energy Bites
These healthy gluten-free, vegan snacks are great to keep in the fridge or freezer for a busy week. These delicious bites have healthy fats, good protein and are sugar-free. With a rich, creamy thick center made with our sugar-free Cookie Butter Spread, a little bit of crunch from our Keto Granola, your mouth and your to-do list will thank you.
Ingredients in Cookie Butter Energy Bites:
Dough balls:
- ½ jar (5oz) Lakanto Monkfruit Sweetened Cookie Butter Spread
- 2 T your favorite protein powder (we used vanilla whey)
- 2 T almond flour
- 2 T coconut flour
- ½ tsp salt
- 1 tsp vanilla extract
- 1/2 cup Lakanto Keto Granola, Chocolate Crunch
Chocolate drizzle:
Mix together the dough ingredients until incorporated. If too dry, add in coconut oil a little at a time. Roll into balls and freeze for 30 minutes on a lined sheet/tray.
Makes 12 1” bites. Serving size-1 bite.
