Raw Cacao for Healthy Chocolate Bark

Thanks to Lakanto Monk fruit Sweetener all of us chocolate lovers can indulge without even the slightest pang of guilt. By combining a few simple healthy ingredients, a delicious chocolate treat can be a part of your daily diet.

Rule number one: make sure the chocolate you're enjoying is made with raw cacao. That's where you get the nutrition—from the purest source of the plant that makes real chocolate possible.

Why raw cacao powder? It's rich in minerals, an amazing source of magnesium and all of these other nutrients and minerals:

  • Chromium
  • Anandamide (the bliss chemical)
  • Theobromine
  • Manganese
  • Zinc
  • Copper
  • Omega-6 fatty acids
  • PEA (Phynylethalamine) mood enhancer
  • Tryptophan
  • Serotonin

Also, raw cacao has very little caffeine, does not elevate blood sugar, and naturally enhances energy. Ok, now let’s see how we can combine Lakanto & Raw Cacao to create a variety of tasty treats that I like to call “Chocolate Bark”.

The proportions provided make a small batch and can easily be doubled or tripled to make a much larger batch.

Basic Chocolate Bark

  • 1/3-cup raw organic cacao powder
  • 1/3-cup organic coconut oil or cacao butter
  • 1/2 – 1-teaspoon sea salt Lakanto to taste (I usually start with 2 tablespoons & adjust from there)
  • approximately 2/3 cup of 'add-ins'

Add in possibilities… nuts, seeds, unsweetened coconut, lemon zest, orange zest, vanilla, cinnamon, nutmeg, ginger, chipotle pepper… the list is limitless.

Directions

Combine cacao, coconut oil & salt in a small saucepan and melt on low heat until well combined. Add Lakanto, a little at a time until it meets your sweetness taste. Remove from the heat and stir in desired add in ingredients until thoroughly mixed. Pour the mixture onto a parchment lined dish or baking sheet and spread evenly. Chill to set (approximately 20-30 minutes in the freezer) Break into pieces and store in the refrigerator in a covered container.

With a little experimentation, friends and family will crave your Chocolate Bark guiltlessly. Enjoy!
