    • 2 tbsp butter

    • 3/4 cup heavy cream

    • 1-1/4 cup cheddar cheese, shredded

    Directions

      1. Heat a medium skillet on low heat and melt in the butter. Then, carefully whisk the cream into the melted butter in 3 separate additions.

      2. In 3-4 addition, whisk in the cheddar cheese. Continually stir until the cheese is melted and you have a smooth, creamy sauce.

      3. Allow the sauce to cool for 5 minutes to thicken before using. Enjoy!

      4. Try adding jalapeños or black pepper to add an extra kick.

      I made this tonight after a week into a very low carb eating plan. I used about 1/2 cup of cream instead of 3/4 cup and I used a shredded pizza blend cheese. I added 1 tsp. dry mustard because I always add it to my traditional cheese sauce. And just a pinch of sea salt. I had sautéed mushrooms with steak strips and steamed a big kettle of fresh broccoli and zucchini. This cheese sauce was so easy, so delicious. Added a rich and satisfying topping to our “caveman” fare! Thank you!
