Ingredients

1 ¼ cup Yellow Cornmeal
-
¾ cup All-Purpose Flour
-
¼ cup Lakanto Cane Sugar with Monk Fruit

2 tsp Baking Powder
-
1 tsp Kosher Salt
-
½ tsp Baking Soda
-
1 Cup Buttermilk
-
⅓ Cup Whole Milk
-
2 Large Eggs
-
2 Tbsp Canola Oil
-
8 Tbsp Butter
Directions
Preheat a 10 inch cast iron skillet in a 425 degree oven In a large bowl mix the cornmeal, flour, sugar, salt, baking powder, and baking soda. Mix well to combine. In a separate bowl combine buttermilk, whole milk, eggs, & canola oil. Combine wet ingredients with dry ingredients.
Carefully remove the skillet from the oven. Add butter to the skillet and melt coating the bottom and the sides. Pour the batter into the skillet and place in the center of the oven. Bake until center is firm about 20 - 25 min.
Serve immediately and enjoy! Pairs well with honey or maple butter.
