Bohemian By The Bay’s Keto Cinnamon Rolls with Cream Cheese Frosting

Ingredients

1/3 cup – organic sour cream

1 1/2 cups – Lakanto Pancake and Waffle Mix

4 tbsp – organic cream cheese, softened

2 – large eggs

1 tsp – organic vanilla extract

1/2 cup water

2 tbsp organic coconut oil


Filling

1/2 cup – Lakanto Monkfruit Sweetener

1/2 cup – softened butter

1 1/2 tbsp – ground cinnamon


Icing

4 tbsp – organic cream cheese, softened

1 tsp – organic vanilla extract

1/2 cup – Lakanto Monkfruit Sweetener

Instructions

- Mix all ingredients in dough to a large bowl until a dough is formed. If too thick, add more water.

– Remove dough and place onto parchment paper. Top with an additional sheet of parchment paper and roll out. Make sure not to roll it too thin – you don’t want any holes.

– In a separate bowl, mix together butter, sweetener, and cinnamon. Spread on top of the dough evenly.

– Next you will roll the dough. It’s going to be a bit sticky so use the parchment paper to assist you.

– Lift one end of the parchment paper slightly to allow the dough to roll over itself, lay it back flat and then roll it again, repeat this until you’ve formed a large roll.

– Use a very sharp knife and cut into 10-12 even sized rolls.

– Place the rolls into a baking dish lined with parchment paper & place into the oven at 375 degrees for 15-20 minutes.

– Remove them from the oven once they begin to brown & set them aside to cool for 5-10 minutes.

– Drizzle glaze over cooled rolls and serve warm!
