Sweet and savory, this delicious, no sugar-added Butternut Squash Casserole has everything you’re looking for in a perfect side. Without the high sugar count found in other recipes, we use our sugar-free Maple Syrup and Brown Monkfruit Sweetener to make the carbs and sugar a fraction of what they are in a traditional recipe. 

Even though large quantities of butternut squash alone may be too many carbs for you, a heaping ½ cup serving of this easy butternut squash casserole is only 5.8 NET CARBS. 

Something magical happens when you roast the butternut squash, then puree it with a mixture of butter and the flavor of maple.  The carbs are definitely worth it for this delicious, satisfying dish.

If you love the taste of Fall, you are going to fall head over heels for Butternut Squash Casserole. This recipe is delicious and simple — perfect for a holiday side dish! The maple syrup and brown monkfruit sweetener perfectly mimic a traditional casserole without sacrificing flavor.

Ingredients

  • 2 lbs butternut squash, halved and seeded

  • 3 tbsp. butter, cut into pieces

  • 1 egg, beaten

  • 1/4 c. Lakanto Maple Flavored Syrup

  • Dash of salt

  • Ground cinnamon, for sprinkling

    1. Preheat the oven to 375 degrees. Place the squash halves, cut side down, on a baking sheet and roast for 30-40 minutes or until fork-tender. 

    2. Scoop out the innards into a bowl and add butter, egg, Lakanto Maple Syrup, and salt. Mash with a potato masher OR puree with a food processor. 

    3. In a small bowl, combine 3 tbsp. softened butter, chopped walnuts, pecans, and Lakanto Brown Monkfruit Sweetener. Mix all ingredients until well combined., using a fork or masher or even your hands. Once it’s all mixed, set aside. 

    4. Spread into a small casserole dish and sprinkle with topping. Bake for about 30 minutes, or until the top is golden brown and it’s bubbling.
