They're also great little bars to pack in lunches or on the go between activities. They're sugar-free and full of good fats & protein for extra brain-power! Teens and tweens and moms and dads love them too.
1 cup Lakanto Monkfruit Sweetened Almond Butter Vanilla Flavored Spread
1 cup blanched almond flour
1/4 cup hemp seeds, flax seeds or protein powder (we used Flax seeds)
1/4 cup Lakanto Caramel Syrup (can sub Lakanto Maple Flavored Syrup)
1 tsp sea salt
2 T refined coconut oil, melted
1/2 cup Lakanto Chocolate Chips or 1 Lakanto Chocolate Bar, any flavor
2 T refined coconut oil, melted
2 T Lakanto Monkfruit Sweetened Almond Butter Vanilla Flavored Spread
sea salt for finishing (if desired)
In a medium sized bowl, mix together 1 c. Lakanto Monkfruit Sweetened Almond Butter Vanilla Flavored Spread, 1 c almond flour, 1/4 c Lakanto Caramel Simple Syrup, seeds, 2 T coconut oil, and salt.
Line a loaf pan with parchment or wax paper. Spread the almond butter in an even layer.
In a microwave safe bowl, melt the chocolate in 25 second increments until smooth and melty, stirring as you go. Add the 2 T almond butter and 1 T coconut oil and stir together well.
Pour the chocolate layer on top of the almond butter layer and chill in the fridge for 2-3 hours. Sprinkle with the sea salt on top, if desired
Cut equally into 12 bars, Store for 1 week in the refrigerator, up to 3 months in the freezer.
Pro tips: Cut them in bite-sized squares and add them to a snack board filled with some of your family's favorites.
Make a double batch and freeze the extras for healthy, sugar-free snacks on busy afternoons.

The loaf pan is a regular loaf pan. When I saw the designation ‘small’ it threw me but now that I’ve made this, forget ‘small’. Just use a loaf pan. Easy to prepare, a little sweet for my taste but a big hit with the grandkids

I love your recipes, made several and they never disappoint!! In this one the hemp/flax seeds are listed but not included in the instructions. Safe to assume they’re mixed into the delicious concoction in Step 1?
