Combine this French Toast Casserole with our Lakanto Maple Flavored Syrup and you have a meal that is simple enough to pull together, substantial enough to keep you going all morning, and sumptuous enough to bring satisfied smiles all around.
Ingredients for Keto French Toast Casserole:
- 10 slices of bread (we used the low carb bread Franz Keto White Bread)
- 5 large eggs, beaten
- 3 T Cream Cheese (optional)
- 1/2 cup heavy cream (can substitute coconut milk)
- 2/3 cup milk of choice
- 1/4 cup Lakanto Coconut Sugar and Monk Fruit Extract Sweetener
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
Ingredients for Keto French Toast Casserole topping:
- ½ cup chopped pecans or walnuts
- Lakanto Sugar-Free Maple Syrup
- Whipped Cream
Instructions for Keto French Toast Casserole:
- Tear the bread into bite sized pieces and place in a prepared 9’”x13” ceramic, glass or metal baking dish, set aside. If using cream cheese, place small dollops among the bread pieces, keeping them about 1 tsp each.
- Combine beaten eggs, cream, milk, Lakanto Coconut Sugar and Monk Fruit Extract Sweetener, cinnamon and vanilla extract in a bowl. Mix well.
- Pour mixture over bread mixture and gently mix to coat all of the bread (let sit for 30-40 minutes or keep in fridge overnight).
- Place dish in a 325F preheated oven for 25-30 minutes or until golden brown and the egg is cooked through.
- Serve immediately with Lakanto Maple Flavored Syrup or Lakanto Cinnamon Flavored Syrup, fresh berries, or Sugar Free Whipped Cream

- Makes 8, ½ cup servings
- Stores covered 2-3 days in refrigerator. Reheats in air fryer or microwave.
