Easy Muffins - 6 Ways

A fresh, delicious muffin that can be easily adapted to your favorite flavor. Try all six: chocolate chip, double chocolate, lemon poppyseed, blueberry, and coffee cake muffins. 

Basic Muffin Recipe

BASIC MUFFIN RECIPE

INGREDIENTS:

  • 2 ⅓ cup (287 g) all-purpose flour
  • 4 ½ tsp baking powder
  • ½ tsp salt
  • ¾ cup (150 g) Lakanto Monkfruit Baking Sweetener
  • 2 eggs
  • 1 tbsp vanilla extract
  • ½ cup (120 ml) oil of choice (canola oil, avocado oil, melted coconut oil, or melted butter)
  • ¾ cup + 2 tbsp (210 ml) buttermilk

INSTRUCTIONS:

  1. Preheat oven to 450°F
  2. Line a muffin tin with 12 muffin cups and set aside.
  3. In a large bowl, combine the flour, baking powder, and salt.
  4. In a separate bowl, mix together the Lakanto Monkfruit Baking Sweetener, eggs, vanilla, oil, and buttermilk.
  5. Fold the dry ingredients into the wet, mixing until just combined. Be sure not to over mix the batter. Having a few lumps or streaks of flour in the batter is okay!
  6. Scoop the batter into the prepared muffin cups, filling a little more than ¾ full.
  7. Bake for 5 minutes at 450°F. Without opening your oven door, reduce the oven temperature to 375°F and bake for an additional 10-15 minutes or until a toothpick inserted in the center of a muffin comes out with just a couple of crumbs.
  8. Remove from oven and allow muffins to cool for 5 minutes before transferring to a wire rack to cool completely.

Chocolate Chip Muffins

CHOCOLATE CHIP MUFFINS

In Step 3, toss chocolate chips into the flour mixture. 


Lemon Poppyseed Muffins

LEMON POPPYSEED MUFFINS

  • 3 Tbsp poppyseeds
  • Reduce buttermilk to ⅔ cup (158 ml)
  • ¼ cup (60ml) lemon juice
  • Zest from 1 lemon

Mix in poppyseeds in Step 3. Add lemon juice and lemon zest with liquids. 


To Make a Glaze

  • ½ cup (128 g) Lakanto Powdered Monkfruit Sweetener
  • 3-4 tbsp lemon juice

  • For the glaze, combine Lakanto Powdered Monkfruit Sweetener and lemon juice in a microwave safe bowl. Microwave for 15 seconds and whisk until smooth. Drizzle over muffins and top with additional lemon zest, if desired.


    Blueberry Muffins

    BLUEBERRY MUFFINS

    Sprinkle muffins with Lakanto Golden Monkfruit Sweetener before baking.


    Double Chocolate Muffins

    DOUBLE CHOCOLATE MUFFINS

    In Step 3, add cocoa powder and then toss Lakanto Semi-Sweet Sugar-Free Chocolate Chips in with dry ingredients. 


    Coffee Cake Muffins:

    COFFEE CAKE MUFFINS

    • 1 tsp cinnamon

    Add 1 tsp cinnamon in Step 3.

    Topping:

    To make the topping, combine flour, sweeteners, salt, and cinnamon in a mixing bowl. Add softened butter and combine until sand-like consistency. Spoon crumbs evenly on top of the batter and gently press them down.

    Once muffins are completely cool, dust with Lakanto Powdered Monkfruit Sweetener.

    The lemon poppyseed icing calls for too much lemon juice. 1 T. is all that is needed otherwise your icing will be too runny.
