    • 2 tbsp melted coconut oil
    • ⅓ cup water, plus more as needed
    • 2 eggs

    2. Add the Lakanto Pancake & Baking Mix, melted coconut oil, ⅓ cup water, and eggs to a bowl. Mix until combined, adding a little more water if needed to reach a thick, spoonable batter.
