    • 1¼ cups unsweetened shredded coconut

    • 1 (13.5-oz.) can unsweetened coconut milk, chilled overnight

    • 2 eggs, room temperature

    • 2 tsp. vanilla extract

      1. Step 1: In a medium skillet set over medium heat, melt the butter. Add the shredded coconut and cook, stirring frequently, until it turns golden brown, about 3 minutes (keep in mind the coconut will continue to deepen in color after it’s removed from the heat). Transfer to a small bowl and allow it to cool slightly.

      2. Step 2: Open the can of coconut milk without shaking it. Spoon the thick, solid coconut cream from the top into a small bowl and reserve for the ganache (you’ll need 5 tablespoons). Set aside the remaining coconut milk for later use.

      3. Step 3: In a medium bowl, whisk together the flour, baking powder, baking soda, nutmeg, and cinnamon. In a separate large bowl, whisk the eggs, vanilla, salt, 1½ cups coconut sugar, and 3 tablespoons of the reserved coconut milk until well combined. Add half of the dry ingredients and whisk until incorporated. Using a rubber spatula, fold in the toasted coconut mixture. Add the remaining dry ingredients and mix just until no dry streaks remain. Cover the dough and refrigerate for at least 2 hours.

      4. Step 4: Position a rack in the center of the oven and preheat to 325°F. Place the powdered sugar in one shallow bowl and the remaining ⅓ cup coconut sugar in another. Using a #20 cookie scoop (or about 3 heaping tablespoons), divide the dough into 18 portions and roll each into a smooth ball between your hands. One at a time, lightly roll each ball in coconut sugar to coat, then roll in powdered sugar. Arrange cookies on two parchment-lined baking sheets, spacing them at least 2 inches apart.

      5. Step 5: Bake one sheet at a time, rotating the pan front to back halfway through, until the cookies are puffed in the center and the edges are just set, about 16–18 minutes. (Baking the sheets separately helps create the best crinkle effect.) Let cookies cool on the baking sheet for 20 minutes, then transfer to a wire rack to cool completely. Flip half of the cookies upside down.
        Do ahead: The dough can be prepared up to 3 days in advance and kept refrigerated. Baked cookies can be stored in an airtight container at room temperature for up to 2 days.

      1. Step 6: Combine the white chocolate, rum, salt, and 5 tablespoons of reserved coconut cream in a medium heatproof bowl. Set the bowl over a saucepan of gently simmering water (make sure the bottom of the bowl does not touch the water). Stir with a heatproof spatula until the chocolate is fully melted and the mixture is smooth, about 5 minutes. Refrigerate the ganache until it is cool and thickened but not firm, about 1 hour.

      2. Step 7: Using an electric mixer on high speed, whip the ganache until it becomes light and easy to spread, about 1 minute. Spread a layer of ganache onto the flat side of each upside-down cookie. Place a second cookie on top, right side up, and press gently to sandwich together.

        Do ahead: Ganache can be made 1 day in advance. Cover and refrigerate. Let sit at room temperature for about 30 minutes before whipping.
