Our friend, Amy Tong, shared her delicious recipe for Asian Chicken Salad Lettuce Cups. The perfect, fresh taste makes these a great meal or appetizer.
1 Pound Rotisserie Chicken, Shredded
1 Cup Red Cabbage, Shredded
1/2 Carrot, Julienned
1 Cup Mango, diced
1/2 Cup Cilantro, Chopped (Plus More for Garnish)
1/4 Cup Green Onions, Chopped (Plus More for Garnish)
1/4 Cup Roasted Peanuts, Chopped
1 Recipe of Lakanto Asian Style Peanut Sauce
1 Head of Butter Lettuce, Washed, Pad Dry, and Separated
1 Lime, cut into wedges for serving
Place the chicken, red cabbage, carrot, mango, cilantro, green onions, and peanuts in a large mixing
bowl. Drizzle Lakanto Asian Style Peanut Sauce on top and toss until dressing is evenly distributed.
Place about a 1/4 cup of Asian Salad onto each lettuce leaf. Garnish with green onion, cilantro and,
serve with a wedge of lime. Enjoy!
