Meet your summer classic Red, White & Blue Bomb Pops! fruity layers and less sugar for a refreshing summer treat that still feels nostalgic and fun!
Ingredients
Red layer

1 cup frozen strawberries

⅘ cup coconut water
-
1–2 tsp beet root powder (optional, for a deeper red) or 3-4 drops red food coloring

4–6 drops Lakanto Original Monk Fruit Drops
White layer
-
1 cup full-fat plain Greek yogurt

6-8 drops Lakanto Original Monk Fruit Drops
Blue layer

1 cup full-fat plain Greek yogurt
-
1–2 tsp blue spirulina powder or 3-4 drops blue food coloring

6-8 drops Lakanto Original Monk Fruit Drops
Directions
Red Layer
Blend strawberries, coconut water, beet root powder or food coloring (if using), and monk fruit drops until smooth.
Divide evenly across 10 popsicle molds.
Freeze for 1–2 hours until firming up but not fully solid.
White Layer
Stir sweetener drops into yogurt until combined for the white layer.
Spoon over the red layer.
Insert popsicle sticks.
Return to the freezer for 1–2 hours.
Blue Layer
Mix together yogurt, blue spirulina or food coloring, and sweetener drops for the blue layer until the color is even.
Spoon over the white layer.
Freeze overnight, or for a minimum of 3 hours total.
To release, run the mold briefly under warm water.
Store in an airtight freezer bag for up to 1 month.
