    • 1 package Lakanto Gluten Free Pumpkin Spice Muffin Mix
    • 2 eggs
    • ½ cup oil or melted butter
    • ½ cup milk or water
    • Nonstick cooking spray

    Soak

    • 1 cup evaporated milk (about 2/3 of a 12 oz can)
    • 12 drops Lakanto Caramel Monk Fruit Drops, plus more to taste

    Topping  

    • 1 cup heavy whipping cream, cold
    • 1 tsp vanilla extract
    • Ground cinnamon, for dusting

    Directions

    1. Preheat the oven to 350°F. Spray an 8x8 inch baking dish with nonstick cooking spray.

    3. Spread the batter evenly in the prepared pan. Bake for 25 to 35 minutes, until a toothpick inserted in the center comes out clean. Start checking at 25 minutes.
