    The "Put the lime in the coconut" popsicle offers a taste reminiscent of a tropical vacation, almost as good as the one you had to cancel due to the pandemic. Not to worry, though, because these popsicles taste just as delightful whether enjoyed in your kitchen, backyard or on the beach.

    While some may question the use of coconut milk due to its high-fat content, it is loaded with health benefits and vital nutrients.

    Ingredients

      • 1 13.5 oz can full fat coconut milk 

      • 5 Tbsp Lakanto Maple Flavored Syrup

      • 1/4 coconut flakes

      • 1/4 cup lime juice

      • 2 tsp lime zest

      Directions

        1. Blend coconut milk

        2. Add in the Lakanto Maple Flavored Syrup, lime zest, and coconut flakes in high-speed blender until well blended.

        3. Add the lime juice while blender is running to avoid curdling of coconut milk

        4. Once a smooth pour into 7 popsicle molds

        5. Freeze for 8 hrs or until solid.
