Pizza de frutas baja en carbohidratos y sin gluten

Una base sin cereales, edulcorante de monkfruit y fruta fresca madura son las estrellas de este espectáculo. El reparto secundario incluye una cobertura dulce (pero sin azúcar) con queso crema suave y ácido batido hasta lograr una delicia.

    A grain free crust, Monkfruit Sweetener and fresh, ripe fruit are stars in this show. Supporting cast includes a sweet (but sugar-free) topping with tangy, smooth cream cheese whipped into deliciousness.

    Ingredients

      • 2 cups finely ground blanched almond flour 

      • 1/2 tsp baking soda

      • 1/4 tsp salt

      • 6 tbsp softened butter

      • 1/4 cup coconut oil

      • ¾ cup Lakanto Baking Sweetener 

      • 1 egg

      • 1 tsp vanilla extract

      • 8 oz cream cheese, room temp 

      • 1/4 cup heavy cream

      • 1/4 cup Lakanto Powdered Sweetener

      Directions

        1. Preheat oven to 325°

        2. In a small bowl, whisk together the almond flour, baking soda, and salt. Set aside.

        3. In a larger bowl, use a hand or stand mixer to mix together the butter, coconut oil, and Lakanto Monkfruit Baking Sweetener.

        4. Mix in the egg and vanilla.

        5. Pour in the dry ingredients and mix until everything is completely combined, but do not overmix.

        6. For optimal dough handling, chill for 30 minutes before baking (optional)

        7. Spread onto a baking sheet lined with parchment paper and  sprayed with your favorite cooking spray.

        8. Bake for 12-15 minutes or until edges just start to brown. Let cool completely before topping

        1. While the cookie cools, in a large bowl, use a hand or stand mixer to blend the cream cheese.

        2. Add in the heavy cream, Powdered Monkfruit Sweetener, lemon zest, and lemon juice and mix until fully incorporated.

        3. Spread evenly over the cooled cookie

        4. Top with chilled, sliced fruit

        5. Refrigerate fully before slicing into triangles for serving
