    • 9 cups Chex cereal

    • ½ cup of Lakanto Semi-sweet Sugar-Free Chocolate Chips

    • ½ cup of Lakanto Milk Chocolate Chips - No sugar added

    • ½ cup smooth peanut butter

    • ¼ cup butter

    • 1 teaspoon vanilla

    • 2 cups Lakanto Powdered Monkfruit and Erythritol Sweetener

    • 1 cup festive sanding sugar (optional)

    Directions

    1. Measure out the 9 cups of Chex cereal and add them to a very large mixing bowl (bigger than you think you’ll need), or the large rimmed baking sheet. Set aside.

    2. In a saucepan over medium heat, melt together the semi-sweet chocolate chips, the milk chocolate chips, peanut butter, and butter, stirring constantly until smooth. If you prefer, you may melt the chocolate chips, peanut butter and butter using the microwave.

    3. Once fully melted, remove from heat and stir in the vanilla extract. Let the mixture cool slightly for 2–3 minutes.

    4. Pour the warm chocolate mixture over the Chex cereal in three stages, gently folding after each addition to avoid breaking the cereal.

    5. Toss carefully until all pieces are evenly coated.

    6. Add the Lakanto Powdered Monkfruit and Erythritol Sweetener and festive sanding sugar to a large airtight plastic bag. Seal and shake to combine.

    7. Add the coated cereal to the bag in batches, gently tossing to fully coat each piece. Transfer the coated cereal to a rimmed baking sheet lined with wax paper.

    8. Spread the cereal into a single layer and chill for 1 hour to allow it to set.

    9. Once set, remove from the refrigerator. Store at room temperature or keep chilled, as preferred and enjoy!
