Ingredients
- 1 cup almond flour
- 1/4 cup coconut flour

- 1/4 cup coconut oil, melted
- 1 egg
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/4 tsp salt

1/2 cup Lakanto Sugar-Free Chocolate Chips
- 1/4 cup chopped walnuts (optional)
Directions
- Preheat your oven to 350°F and line an 8x8 inch baking pan with parchment paper.
In a large mixing bowl, combine almond flour, coconut flour, Lakanto Classic Monkfruit Sweetener, baking soda, and salt.
Add in melted coconut oil, egg, and vanilla extract. Mix well to combine. Let stand for 3-4 minutes to let the Monkfruit Sweetener fully dissolve.
Fold in Lakanto Sugar-Free Chocolate Chips and walnuts, if using.
- Transfer the batter into the lined baking pan and smooth out the top.
- Bake for 18-20 minutes, or until the edges are golden brown and the center is set.
- Allow to cool completely in the pan before slicing into bars.
Recipe Note
Don't overbake: Lakanto Monkfruit Sweetener can brown more quickly than sugar, so keep an eye on your cookie bars and take them out of the oven as soon as they're lightly golden brown. Don't overbake!
Lakanto Monkfruit Sweetener can take longer to dissolve and incorporate into a recipe. Make sure to mix the well with the other ingredients and allow the dough to rest for a few minutes before baking to give the Monkfruit Sweetener time to dissolve.

What a treat! Used round 8 inch pan with waxed paper on the bottom. Cut 8 inch round into 8 wedges. Had a good compliment from my family. Wedges were about 1/4 inch in height, moist and used chocolate chips. It’s a winner.
