Ingredients
Peach Syrup
-
2 Cups Diced Fresh Peaches (skin on)
-
Zest and Juice from 1 Large Lemon
-
¾ Cup Classic Monkfruit Sweetener with Allulose
-
1 Cup Water
-
2 Tsp Vanilla Syrup
Peach Puree
-
½ of a Peach
-
¼ Cup of Water
Soda
-
Sparkling Water, for Topping
-
1 Tbs Heavy Cream
Directions
Homemade Peach Syrup
Add the Lakanto Monkfruit Sweetener with Allulose and lemon zest to a small bowl. Using your fingers, massage the sweetener and zest together until fragrant and evenly combined.
Add the diced peaches, sweetener and zest mixture, water, and lemon juice to a small saucepan over medium-low heat. Simmer for 15–20 minutes, until the peaches have softened and begin to break down. Mash the peaches throughout the cooking process using a wooden spoon or similar utensil.
Strain the cooked syrup to remove the solids, using a spatula or spoon to press out as much liquid as possible.
Transfer the syrup to the refrigerator and let it cool completely.
Peach Puree
Blend ½ of a peach with about ¼ cup of water, then strain to make peach puree.
Peaches and Cream Dirty Soda
Add 2 tablespoons of peach syrup to an ice-filled glass, then add ¼–⅓ cup of peach puree.
Top with sparkling water and about 1 tablespoon of heavy cream.
Stir, adjust to your preferred sweetness level, and enjoy!
