Sugar Free Oatmeal Raisin Cookies

1 egg or egg replacer

1/2 cup Lakanto Golden

1 tsp cinnamon

1/4 tsp salt

1/4 tsp baking powder

1/2 tsp baking soda

1/4 cup plus 2 tbsp apple sauce

1/4 cup butter or 1/4 cup melted coconut oil for dairy free version

1 1/4 cup oatmeal ( old fashioned)

1 cup oatmeal flour or your favorite gluten free flour mix

1 cup raisins


1Preheat oven to 350F.

2In a bowl combine LAKANTO®, eggs or egg replacer, cinnamon, salt, baking powder, baking soda. Beat it until well mixed. Then add oil or butter.

3Add apple sauce, mix well.

4Start adding oatmeal and flour at the same time until well mixed . Last add raisin.

5Line a cookie sheet with unbleached parchment paper or grease it with coconut oil. Using a spoon scoop out dough and form it into a cookie and place cookies at least 1.5 inches away from each other. Should be just enough to fill a tray.

6Place in the oven for 10-12 minutes at 350F. Do not over bake. Remove them right after the edges set and they just start browning on the bottom. The cookies solidify more after you remove them.

7Place on a baking rack and allow to cool.
