Sugar Free Teriyaki Chicken


1 Cup Lite, Low Sodium Soy Sauce

1/2 Cup Pineapple Juice (Sugar-Free)

1/4 Cup Crushed Pineapple

1/4 Cup Golden Lakanto Sweetener

Two Cloves of Garlic

1 Teaspoon Fresh Ginger


1Put all the marinade ingredients into a blender and blend until completely combined.

2Pour over desired meat (great w/ chicken thighs, beef strips, and salmon) in a large container and put the lid on. Give the container a slight shake to make sure the marinade is getting to all the meat. Place in refrigerator and let marinate 30 minutes-overnight.

3Once the meat is marinated it's time to cook. Using a medium to large pan heat over medium-high heat. Add about 1 tablespoon neutral oil (avocado oil, olive oil, vegetable oil) and allow to heat up. Swirl the oil to coat the bottom of the pan and then place the marinated meat in the pan. For chicken thighs allow to cook for about 7 minutes then flip over and allow to cook for about 7 minutes more. Once cooked pull off the heat and let it rest for a minute. Once rested, slice and serve.
