Sugar Free Peanut Butter Brownies

The only thing better than brownies is brownies AND peanut butter. 

This recipe uses Lakanto Peanut Butter Powder to make a light and fluffy peanut butter frosting that isn't weighed down by the extra oil that's in peanut butter.  

Our powdered sweetener makes it easy to make a delicious, fluffy, sugar-free frosting of your choice. Add peppermint or almond extract if peanut butter isn't your thing. 

We have the easiest way to make sugar-free, high fiber brownies at home, with our Sugar-Free Brownie Mix that's sweetened with monk fruit. Our brownie mix is low in carbs and high in fiber. 

Sugar Free Brownies

Lakanto Low Carb Brownie Mix

1/2 cup coconut oil, melted

1 tsp water

2 eggs

 

Preheat oven to 325 F. Lightly grease 8x8 baking pan and set aside. Combine brownie mix, eggs, coconut oil, and water until well blended. 

Pour batter into 8x8 baking pan and spread evenly. Bake at 325 F for 25-30 minutes or until a toothpick comes out clean. 

 

Sugar Free Peanut Butter Frosting

1/2 cup butter, room temperature

1 8 oz 

1 tsp vanilla extract

2-3 T Heavy Cream or milk of your choice 

1 cup Lakanto Peanut Butter Powder, + 3 T water 

2 cups Lakanto Powdered Monkfruit Sweetener

Combine water and Peanut Butter Powder together until smooth. Add to all other ingredients and mix well. 

Wait for brownies to cool before frosting for best results.

After skimming the reviews about this mix, I decided to follow the advice of the reviewer who suggested a few chocolate chips (I used 1/4 cup Lily’s dark chocolate baking chips which are sweetened with stevia) and 1/4 cup chopped pecans. The baking time on the package worked fine for me. There is a brand of brownie mix that is keto friendlier than Lakanto but it is also costs three dollars more per package. In my opinion, this is brand strikes a decent balance between taste and cost.
