Dear Ellen- the classic monkfruit will become “crunchy” and unless you prefer a candy crunch added to the recipe I suggest you try Lakanto’s Baking Monkfruit powder instead. It should turn out amazing ;)
I recently made a lemon birthday cake with homemade lemon curd filling and buttercream icing I used Classic monkfruit in all of them. The next day the lemon curd especially tasted grainy, like the sweetener had not dissolved. I followed the recipes precisely. Any ideas on what went wrong?
