Sahara’s Super Fresh Strawberry Jam

INGREDIENTS

  • 1 lb fresh or frozen strawberries (if frozen, allow to thaw completely)
  • 1 - 4 tbsp Lakanto Maple Syrup (depending on how sweet you want it)
  •  lemon, juiced (depending how sour you want it)

OPTIONAL ADD-INS

  • 2 tbsp whole chia seeds for extra gelatinous crunch
  • 1/2 tsp cinnamon for blood-sugar-balancing benefits
  • 1/2 tbsp grated ginger for added spice

Directions

  1. Blend all ingredients until smooth.
  2. Place in a stainless steel container bowl and place in dehydrator. Allow to dehydrate on 115 degrees overnight.
  3. Remove from dehydrator and store covered in fridge overnight to thicken.
  4. Serve with my raw-vegan bread, coconut yogurt or whatever else you'd like!

 NOTES

If you don’t have a dehydrator, you can still make this recipe using your oven. It just won’t be considered raw because the nutrients in the almonds are destroyed above 118 degrees. I highly recommend purchasing a dehydrator so you can make plenty of my raw-vegan recipes; some are as low as $35 on Amazon and work wonderfully.

Alternatively, you could use your oven on the lowest temperature and open it periodically to keep the temperature low. It may take anywhere from 1-4 hours in your oven, depending on the temperature of your oven. Check the consistency of the strawberry jam to ensure it is sticky.
